Going non-vegetarian with rice
Society & Culture November 24th, 2007One interesting feature of Indian Rice is that it could be used for all purposes while preparing the food. Either some tasty vegetable recipes like the pulao, Jeera rice, lemon rice, or butter rice could be made or some delicious non-vegetarian recipe could also be prepared with it. For example, rice is a very important component for preparation of Indian Chicken Recipes like the Chicken biryani made with spicy chicken and Basmati rice.
Ingredients of one of the mouth watering Indian Recipes, the chicken biriyani are –
1. Two cups Basmati rice,
2. ¾ kg of chicken pieces,
3. Milk, Yogurt, thinly sliced onion,
4. Ginger, garlic and green chilly pastes
5. Tomato puree,
6. Red chilly, turmeric, roasted cumin, and green cardamom powder, all between ½ to 1 tea spoon ful.
7. Saffron, coriander powder and leaves and vegetable oil.
Method of preparation for both North Indian and South Indian Recipes are identical. Mix tomato puri with spice pastes, yogurt and spice powders. Marinate the chicken with this mix and keep aside for 3-4 hours. Heat oil and fry onions until golden brown, add marinated chicken and cook for ten minutes. Add four cups of water to the rice and mix gently. Garnish with green coriander leaves and serve them hot to your guests. In south India, sour card is provided with the chicken biriyani while in the north vegetable salads are more preferred.
